The catalog is the list your AI agent answers from. When a customer asks "do you have this in black?", "how much is the deep-tissue massage?" or "is the two-bedroom still available?", your agent looks the answer up in this list at the moment it replies. A price you change here is the price it quotes on the next message.
Its menu item is named after your business type: Products, Services, Listings, Menu items, Rooms & packages and so on, and its fields change to match. A salon is asked for a duration and a stylist; a property agency for bedrooms, bathrooms, area and location. You never see fields that don't apply to you.
